Keto “Good AnyTime” Pot Roast

Keto "Good AnyTime" Pot RoastWith so many of us in “lock-down” inside our homes, racking our brains as to what to cook next for ourselves or the family, I thought I would share my Keto “Good AnyTime” Pot Roast Recipe. This is a family favorite and they do not even know that it is keto, they just know that it tastes great even when I serve it with Cauliflower Rice instead of with rice.

I am the only one in the house that follows a ketogenic lifestyle and it can be pretty difficult if I don’t make it a point to cook for myself. My wife does cook great meals and I do enjoy most of the entrees but the side dishes tend to include beans of some sort (not keto) as well as rice (also not keto). The family really enjoys the rice with ketchup. Back when I did eat rice I always added some butter, buried under the rice so the rest of the family didn’t see it. Now that butter is an important part of the keto diet (At least to me) I do the same with my Cauliflower Rice.

Keto "Good AnyTime" Pot Roast

Ingredients
  • 1 t. garlic powder
  • 1 T. Italian seasoning
  • 1 T. cocoa powder
  • 1 t. Himalayan salt
  • ½ t.fresh ground black pepper
  • 3 lbs. chuck roast
  • 3 T. Avocado oil, divided
  • 8 oz. Portobello mushrooms, sliced
  • 4 c.Farm fresh beef broth
  • 1 T. tomato paste
  • 2 bay leaves
  • 2 T. fresh parsley, chopped
Instructions
  1. Add the garlic powder, Italian seasoning, cocoa powder, salt, and black pepper to a small bowl and stir to combine. Rub this mixture all over the surface of the chuck roast, pressing firmly to make sure it adheres. Set aside.
  2. Heat two tablespoons of olive oil in a large Dutch oven over medium heat. Once hot, add the seasoned chuck roast and brown on all sides, approximately 3-4 minutes per side.
  3. Once browned, remove the roast from the Dutch oven and transfer to a plate. Add the remaining tablespoon of oil and the Portobello mushrooms to the pot and sauté, stirring occasionally, until the mushrooms develop some color and start to release their liquid, approximately 4-5 minutes.
  4. Deglaze the pot by adding the beef broth and scraping up any brown bits on the bottom to incorporate them into the liquid. Stir in the tomato paste and add the bay leaves. Return the chuck roast to the Dutch oven and cover.
  5. Reduce heat to low and simmer for 3 to 3½ hours, or until the meat is fall-apart tender. Remove from heat and discard the bay leaves. Transfer the roast and mushrooms to a serving platter and cover to keep warm. Set aside.
  6. Bring the liquid in the pot to a boil over medium-high heat, then reduce the temperature down to medium for several minutes or until the sauce thickens a bit.
  7. To serve, spoon some of the pan sauce over the beef, along with some of the mushrooms. Garnish with fresh parsley, if desired, and pair with creamy mashed cauliflower, roasted radishes, or your choice of sides. Enjoy!

Life Has Forever Changed

Life Has Forever ChangedAs we live through this World Wide Virus that is claiming so many lives. We must realize that life Has Forever Changed.

It is not just the quarantine that is being imposed upon us at this time, we will forever question if we really want to be with a crowd of people as well as many other things from our past.

Perhaps we started questioning that a couple of years ago when people enjoying themselves in groups started getting killed by crazed shooters and fires. Perhaps it did not dawn on us until now when we can see just how deadly and fast something like a virus can spread across the world.

Regardless of how it happened, going forward from here we will question how many contacts with other people we have never met that we will be comfortable with. for many people, it might not matter but for others such as myself, there will always be the question “Do I really have a pressing reason to do this?”

Life Has Forever Changed

Social Inner action will be limited to smaller groups. The governments will tighten the control over us that they already have. It will be harder to travel between states or visit other countries. There will be tighter “proof of Good Health Requirements” before you can get on the trains, planes, ships, and busses.

However you want to look at it, like it or not, George Orwell’s “1984” has arrived in the year 2020. A little late but it is here now. We are being lead to believe that all the changes the governments are making are for our own good. You might want to question that a little. The governments are greedy when it comes to controlling their citizens. They feel the more control – the better. There will be some good changes for sure but there will also be changes that before long we will look back on and ask ourselves how we let that happen.

Life Has Forever Changed

The challenge that lies ahead now is for each of us to plan on ways we can carve out a future that we can not only live with but one that we can enjoy. Some of the things to think about while we are quarantined are listed below. It is not a complete list but it is a starting point.

Perhaps it will be better to party in a home with family and friends. Watch sports games on the television instead of going to the event where there are large crowds. Have cookouts more often. Finding other ways to entertain family and friends without being exposed to the crowds. In short, creating our own small community of like-minded family and friends. While we are at it, perhaps it is the time to get to know the people that live on the right and left of us. Each block or apartment complex can create their own “block watch” where we keep an eye out for others living near us. There might just be some untapped friendships hidden there just waiting to be discovered.

Can you plant your own garden? If you have not planted anything in a while, start small. a couple of herbs, some heirloom tomatoes, perhaps one cucumber vine, etc. First, you will rediscover just how good homegrown produce like tomatoes taste, and second, it can save you money and a trip to the store when you have a great salad growing in your yard or on a window sill.

It is time to give up the fast-food meals with their lack of nutritional value and return to eating fresh whole foods to support our bodies and brains. That might be a major adjustment for some but once you find how good fresh food can be, the make-believe burgers will become a thing of the past.

I can help along the lines of tasty recipes you can make at home and I will post more and more of them as we go forward. My personal choice is more keto-based however, my wife does not follow keto so her foods are sprinkled with a little more starch than mine. I will share both types of recipes. Often you will not be able to tell it is keto because it is so good.

We also need to keep moving even while we “Stay at Home” and avoid social contact with others. That does not mean we can not get out and walk. If you can not walk in comfort outside your house perhaps you can walk inside. I often walk at 4 a.m. through the front room to the kitchen and back. It is too dark outside at that hour but I want to keep the body moving and I have a goal of 7500 steps a day so that walk helps. I am sure you can find a way to keep moving near home until you can get back to the parks and trails we enjoy.

 

Yes, Life Has Forever Changed and we will all be a little different from this point going forward. We can make it an exciting adventure we enjoy or we can sit around complaining about how bad things are and wishing for “The Good Old Days” but those days are not coming back so let’s make the best of what this new world has to offer.

The Coronavirus And Travel From Mexico

The Coronavirus And Travel From MexicoThe Coronavirus and travel from Mexico became an issue for me a couple of weeks ago when I had to visit Wisconsin on business. It was a trip that could not be avoided. I wanted to spend as little time away from my wife and our home here in Mexico as possible. So I booked a flight out of Puerto Vallarta, leaving on a Monday with a return flight Saturday.

Monday I get to the airport at 5 a.m. for a 6:30 departure. The plane is loading and we taxi out for takeoff when the pilot discovers a gas leak in the right engine. Keto Bacon And Cheddar Breakfast Sandwich really comes to life when you add a few slices of ripe avocado and tomato before serving. I have always enjoyed a good cheddar so when I can get it here in Mexico, it is my first choice. My doctor advises me to stick with the white cheeses so I always look for white cheddar but when it is not available I use what I can. Keto Lemon Lime Fat Bombs

When It comes to favorites, Keto Lemon Lime Fat Bombs are at the top or very near the top of the list of my favorites, so I am revisiting a recipe I shared back in Feb. of 2017 on my other blog.  I enjoy the slightly tart flavor because it does not feel as much like a dessert as many of the other fat bomb recipes I will be sharing with you over the next few weeks.

I will warn you upfront, if you are new to the ketogenic lifestyle, you need to remember that fat bombs have a place in the diet but you don’t want to start eating them like candy. We use them to up our fat percentage when our numbers are a little to close between the protein and the fat. My goal is 5% Net Carbs, 20% Protein and 75% Good Fat which can be a challenge at times.

One site is about a whole food/keto lifestyle and the other is about Life in Mexico as an Expat plus living a keto lifestyle here.

While I do enjoy sharing such information, keeping up two blogs is One Challenge Ends While Others Beginmore time-consuming than I wish to do. I have decided to continue writing about living in Mexico and keto and let the other website rest for now.
